So easy to make and such a great snack to have to hand on those days when you need something sweet to satisfy that craving and see you through the afternoon.
All you need is a decent food processor/ blender – throw all the ingredients in together and blend for 3-4 minutes until combined. After a couple of minutes the ingredients will start to come together, you can then divide into teaspoon sized balls. Store in the fridge for up to 7 days.
Here are 3 of my favourite combos.
Cashew and coconut – makes approx. 12-14 balls
80g Cashew nuts
10 pitted dates
40g desiccated coconut (put half in the mix and save the rest to coat)
2 tsp honey
1 tbsp peanut butter
Chocolate and almond
60g Almonds
40g Hazelnuts
5 Dried figs
1tbsp cocoa powder
1 tsp honey
20g sesame seeds (optional as used to coat the balls)
White chocolate and coconut
100g cashew nuts
40g coconut
40g white chocolate chips
5 figs
1 tsp honey
